I will play my first battle against Orks on Friday so I can't tell
you yet if my strategies are good agaisnt green skins.
These are the advantages of small detachments against big ones (of
course all this is only my humble opinion) :
Small detachments are numerous
-> lots of targets for your ennemies
-> lots of threats for your ennemies
-> increased flexibility and mobility
-> losing one of them is not so important
