I have nothing to add to Kelvin's post as far as his Infantry choices,
but I must say that (IMO) the best Vehicle proxies for Tau
are the CinC (useta be FASA's)
Renegade Legion/Centurion line:

They are inexpensive, they look "hammer-heady" (enough anyway)
and you can still fine the light APC plastic sets on eBay -very- inexpensively.
